Most of you are probably aware of my love for nachos. So you shouldn't be surprised that when I came across this recipe for nacho casserole in my Good Housekeeping Vegetarian Meals cookbook, I couldn't resist!
Here's what you'll need:
1 can condensed cheddar cheese soup
1/2 cup skim milk
1 jar salsa
1 bag tortilla chips
1 can fat-free refried beans
1 jar sliced jalapenos
1 cup shredded cheddar cheese
Here's what you'll do:
1. Preheat oven to 400 degrees.
2. In casserole dish, stir undiluted soup with milk until well blended. Spread evenly.
3. Top with half of salsa and half of chips.
4. Carefully spread beans over chips. Top with remaining salsa and chips. Sprinkle evenly with jalapenos and cheddar cheese.
5. Bake about 20 minutes.
